Starters:
-Smoked salmon with apples, seaweed biscuit and chives
-Sturgeon carpaccio with balsamic vinegar pearls, tangerine and cress
-Roasted scallops on celeriac cream, green tea and small vegetables
First Courses:
-Red Lentils with monkfish cheeks cooked a low temperature with herbs and vegetables
-Global rices with lobster and seaweed
Main Course:
-Slice of Amberjack with mixed peppers, cauliflower cream, mushrooms and violet potatoes chips
Desserts:
-Wild berries Sorbet with hibiscus granitel
-Chocolate mousse with bergamot pearls, fruit jam and crunchy oat

-Potatoes cream with crunchy lard and sauerkraut
-Beef shabu shabu with mustard, burned wheat croutons and cress
-Veal fillet with green pepper, endive, raisin and black garlic

-Cocoa and orange Cappellaci with pigeon ragôut, mushrooms and sheep cheese
